After watching Hugo devour his cookies, I decided to make some cookies of my own! Here are some we can really all enjoy. If you're allergic to peanuts, you could substitute another nut butter as well. Last night these cookies were really a hit - there's some crumbs left on the plate and that's about it!

Try out these healthier alternatives to the regular Peanut Butter Cookies, and love the fact that they are VEGAN and GLUTEN-FREE and DELICIOUS!! (even the carb loving testers agreed!!)
Vegan Gluten-Free Peanut Butter Cookies
This recipe made 8 BIGGER cookies - not too big, but pretty thick. You could make them smaller and thinner if you want. Or, double up the recipe if you want to make a bigger batch.
1. Preheat oven to 325 degrees F & grease your cookies sheets.
2. In a large bowl, combine: 1/4 cup tapioca flour, 1/2 cup rice flour, 2 Tbsp. Flaxseed meal, 2 Tbsp. almond meal, 1/2 cup Gluten-free oats, 1/2 cup brown sugar, 1 tsp. baking powder, 1/4 tsp salt, & 1/2 tsp. xanthan gum. Stir until combined well.
3. Add in 2 tsp. vanilla, 2 Tbspn. applesauce, 2 Tbsp. peanut (or other vegetable) oil, 1/4 cup maple syrup or agave and 1/2 cup creamy peanut butter.
4. Once the dough is incorporated, drop onto the cookie sheets in spoonfuls. The dip a fork in water and add the peanut butter cookie marks across 'em!
5. Bake for about 15 minutes.
**Like I said, this made 8 bigger cookies, so if you want more double up the recipe!! ENjoy!
