WOW! This was some good pie!! It's so good you should try it even if you can eat gluten & dairy!
I'm kind of embarrassed to admit this, but my bf and I shared pretty much the whole things last night. I could not stop eating it! (.......and then I pushed my belly through some yoga to make up for it:)
This was really light, creamy and satisfying .... & it was pretty fast and easy to make. You only have to bake the crust and let it sit. Try it out!
Chocolate Banana Cream Pie (Vegan & Gluten-Free)
I got the recipe idea for the crust from Enjoy Life Foods, Chocolate Pie Crust Recipe: http://www.enjoylifefoods.com/enjoying_life/recipes_ind.php?id=93
1. Preheat the oven to 350 degrees F. Grease a pie pan.
2. In a blender or food processor, combine: 1 box of 'Enjoy Life' soft baked cookies - I used chocolate chip (Experiment!), 1/4 cup brown rice flour, 2 Tbsp. cocoa powder, and 2 Tbsp. tapioca flour. Pulse until it is all combined well.
3. Cut up 1/4 cup and 1 Tbsp. of butter substitute. Add it to the mixer or food processor & pulse again until it is all well incorporated. (Don't over-mix:)
4. Now press this into your pie dish to make a nice crust. Bake for about 9-10 minutes.
5. While the crust is baking, you can make your pudding. Cook a large package of vanilla pudding according to directions & let it sit.
6. Take the crust out when done & let it cool for a minute. Now slice up 2 bananas and line the bottom crust w/ bananas.
Pour the pudding over this, and top with the rest of the bananas. Put into the fridge to cool and gel into place for about and hour. ENjoy!!
