Happy V-day to ya - hope it's off to a great start. I say Valentine's Day should be any old day you choose - don't let other people tell you when to be lovey dovey.......& def. don't celebrate only one day a year!
......that said, I did make these delicious gluten-free blueberry muffins for my own love muffin anyway:) - plus you know I love 'em too!!

They're from the gluten-free girl - she has lots of great recipes on her site you should check out. In the muffins I just substituted earth balance for the butter, coconut yogurt for the reg. yogurt, & flax meal w/ water for the eggs. You can use substitutions for a lot of her recipes & they are deliciously gluten-free!

AND if you're looking for a salad that really shows how much you care, try out this Red cabbage salad recipe I made the other night. It was really yummy & the cabbage and apples are cooling for your eczema/inner heat. Yum!
Red/Purple Cabbage Salad
1. Core & slice up one head of red cabbage & 1 or 2 apples (depending on your taste).
2. Combine in a large bowl with 2 handfuls of chopped walnuts.
3. To make the dressing, combine: the juice of 1 lemon, 2 Tbsp. apple cider vinegar, 1/4 cup of olive oil and some salt & pepper. Whisk it all together & pour over the chopped ingredients. Toss it up & there you go!:
