Fiesta Pasta Salad

Hope you're having a fiesta of your own!  Maybe you can make some of this yummy Fiesta Pasta Salad to celebrate:)  It's good anytime -lunch, bbq, dinner, or snack......



Fiesta Pasta Salad
1.  Boil some water for your pasta.  Once boiling rapidly add in the pasta.  I used Pagoda's Quinoa garden pagoda pasta:


2.  Slice up a few carrots, 2 celery stalks, 2 or 3 green onions and a handful or more of green olives.   


3.  Once the pasta is drained let it cool, & add it to a large bowl.  Add in the sliced veggies & olives, a cup or two of mixed bean salad (pic below), and 1 sliced avocado.


4.  Toss it up with some salad dressing of your choice - that you can eat:)  - I used Brianna's Poppyseed dressing.  You could also use some olive oil & vinegar.  Also toss in some salt and pepper & any other seasonings you want.  I also added in a few handfuls of broken up corn chips - yum:) - try it out!


ENjoy! - I had mine with some marinated tofu - yum!
