This hummus recipe is great - it's fast, easy, simple, and tastes great....Seriously, everyone I have ever made it for likes it. Even people who don't like chickpeas - try it out!
Recently, someone was asking me about some good snack recipes, and this definitely qualifies. It's really easy and healthy to make - filling too! Great for snacking yourself, or use as a spread for crackers, breads, sandwiches....It's also a great appetizer for parties and dinners.

Open a can of chickpeas, drain & wash:
In a food processor or blender, combine: the chickpeas, 1/4 to 1/2 cup olive oil (depending on how you like it), juice of 1/2 lemon, salt, pepper, fresh thyme & oregano.
thyme from the garden.....
Mix until well combined & smooth. You could also add garlic, spices, veggies, etc. depending on your taste. Try out some different flavors & see what you like. Scoop into a bowl & enjoy with gluten free crackers, bread or veggies. Yum!
