Baked Beans & Strawberry Microgreen Salad

Happy Sunday!

And on another note, you have got to try these baked beans!  They were sweet, salty and delicious. You can keep them vegan, or add some bacon on the top before baking them - either way they are so good.


Have them as a side dish or a main dish for some delicious protein:)

Baked Beans (Vegan or Not!)
-This made enough for 4-6, really 4 if it's one of your main things:)
1.  Preheat the oven to 425 degrees F.  Grease a baking pan or casserole dish.
2.  Drain two 16 oz. cans of pinto beans and wash off the liquid.


3.  In a large bowl combine: the beans, 3/4 cup of molasses, 1/4 cup dark brown sugar, 1 apple  - cored and diced up, 1 chopped onion, 1/2 tsp ground ginger, 2 chopped garlic cloves, and 1 tbsp. yellow mustard.  Mix it up well.


4.  Pour it all into your baking pan & put in the oven.  Bake for about an hour (or more if needed) YUM!
(If you're going to add bacon, cook it up half -way in a pan, and then add it to the top before baking- it will crisp up as if cooks)



Strawberry Salad
Another version of one of my favorites! - Makes enough for 2-6.
1.  In a large bowl, combine a few handfuls of greens, a handful of micro greens, a few sliced strawberries & a handful of chopped walnuts.  Toss it up and add some olive oil and red wine vinegar.
