Yes, Katie! - it's Taco Time. I have been meaning to post tacos on here for awhile.......so here they are! I eat tacos pretty often - because I CAN eat corn tortillas:) & because they're pretty easy to make......and you can fill them with just about anything that you have - grilled & fresh veggies, meat, tofu, seitan or tempeh, rice, beans, etc.etc.etc.
Have 'em with whatever you have lying around, or you can make some like we did!!
Why not make tonight a Fiesta & have some Tacos?!
TACOS
1. Turn the oven on warm to heat up your taco shells if you want - (I used fresh corn tortillas).
2. In a large skillet heat up your ground meat or tempeh and stir in some taco seasoning (w/ a little water) - you can really add whatever seasonings you want - some fresh chopped onion & cilantro are good too!
3. Cook this up until it's browned & cooked through.
4. Heat up refried beans in skillet. (I made my own & I was soooo glad I did! They were delicious & really easy to make - try it out!) TO make the beans mash up a can of black, red or pinto beans in a bowl. Mash until smooth & add in some salt, pepper & chopped onions.
5. Add a Tbsp. or two of olive oil to the skillet & then add in the mashed bean mixture. Cook for a few minutes until the beans are heated through.
6. Make any other topping you want - we also added some fresh lettuce, nacho cheese sauce: Nacho Cheese Sauce Recipe & fresh guacamole: Guacamole Recipe (both from earlier posts:))
7. NOW, assemble your tacos & ENjoy!
