TWO GREAT MEALS!: #1. One Pan Veggie Pasta & a Mixed Green Salad


Two Great Meals for you to choose from!  Both really yummy & easy to whip up!!

#1. One Pan Veggie Pasta & a Mixed Green Salad



One Pan Veggie Pasta
1.  In a large pot bring water to a boil.  Add in quinoa spaghetti pasta & cook according to package directions.
2.  In a large skillet pan, heat up some olive oil.  Add in 1 sliced garlic clove & cook for a minute.  Throw in 1 sliced zucchini and 2 sliced carrots.  Stir it up & let it cook for a minute.
3.  NOW add in a few Tbsp. of hummus and a Tbsp or two of cilantro chutney.  (Yum! This was almost like a vegan alfredo sauce:)  Stir it up until it breaks down & everything is coated.
4.  Add in a few handful of spinach.   Stir it up & remove from heat.


5.  Once the pasta is cooked, drain it & add it in with the veggies.  Toss to coat everything.  

Mixed Green Salad
1.  In a large bowl, combine a few handfuls of greens, 1/2 sliced apple, 1 sliced avocado, 1/2 sliced cucumber, and 1/2 can drained & rinsed kidney beans.
2.  Toss it all up & add dressing of your choice.  ENjoy!
