Gluten-Free Peanut Butter & Banana "Sandwich"

I know this isn't really a recipe, but it's one of my all time favorite snacks/breakfasts/lunches/dinners/desserts!!  Seriously, you can have this one just about any time and feel good about it - & filled up:) - & it's REEEEALLY EASY!


Plus, the rice cakes are a great sandwich 'bread' when you can't have gluten.  You can make rice cake sandwiches with just about anything: hummus, veggies, spreads, tofu, etc., etc..........And I guarantee it'll be tasty & satisfy that craving you've been having for a big bready sandwich (I know it did mine:))

Try it out for an easy snack anytime!

Gluten-Free Peanut Butter & Banana "Sandwich"
1.  Get out two rice cakes and slather them with peanut butter.


I really like these organic Lundberg brown rice cakes:  (and they have 'em at Trader Joes!)


2.  Top with a layer or two of sliced bananas & ENjoy open faced or 'sandwich' style.  Yum!
