Guacamole & Fresh Corn Chips

.....I guess these days I'm a lot of avocado....
Guac & fresh corn chips......what could be better?? Making some for this weekend's Superbowl!!  Try out a batch of this guacamole - you're friends will be raving.... And, if you're gonna skip the game all together, just make up a single batch to gobble up yourself - I do it all the time!!

The fresh corn chips are delicious too - if you have some old tortillas lying around, you should try this out.  It's easy & really yummy.  OR, if you wanna skip this part just grab a bag of corn chips to go with your guacamole (definitely easier if you're feeding a crowd).



Fresh Corn Chips
Preheat the oven to 350 degrees F.
Cut up some day or two old tortilla chips into whatever shapes you want. (This is a great way to use leftover tortillas & you don't have to throw them away!)
Toss the 'chips' in some olive oil and salt (and other spices if you want!), and spread on a greased baking sheet.  Mine looked like this:


Now bake for 20-25 minutes.....Keep watching 'em towards the end - to make sure that they are crispy enough, but not too crispy.....(watch out: I have definitely burned these before:))
Let cool & you're done!

Best Guacamole Ever
In a medium-sized bowl, mash up 1 avocado.  (This recipe is for 1 - I recommend using ONE avocado per person, and then just adjusting the rest of the ingredients, if you have a crowd;)
Stir in 1 tsp. lime juice (this keeps it green), 2 Tsp. fresh chopped cilantro, 3 chopped scallions - including some of the stems, 1 chopped clove garlic (if you can have it), paprika, salt & pepper.
Mix it up & ENjoy!
