Aunt Gina's (/Aunt Karen's) Cabbage Salad


Here it is - the real deal - Aunt Karen's Cabbage Salad!!  I know I posted a version of this cabbage salad b/f without the noodles and now here's the real thing adapted so that its gluten and soy free.  If you liked the other salad, you're gonna love this (check it out Lisa!)

It has always been one of my favorites, and now it can be one of yours too.........
 This recipe makes a huge bowl - great for parties, potlucks and to share with friends!! If you want less just halve the recipe.



Aunt Gina's/Aunt Karen's Cabbage Salad
1.  Preheat oven to 350 degrees F.
2.  In a large bowl, combine: 1 head of green cabbage - finely shredded, 1 bunch minced green onions, and 3 sliced carrots.  (I also added a little red onion chopped up & it was pretty good)
3.  In a small pot, melt 1/3 cup earth balance spread (or other butter substitute).  Once melted, mix in some broken up thai-style rice noodles.  I used about 3 handfuls (whatever you think is equivalent to a package of ramen - that's what's used in the gluten version).  Also add in 2 Tbsp. sesame seeds and 1 cup slivered or chopped almonds.  (I added some chopped cashews too)  Stir until it's all coated.
4.  Now take this noodles mixture, and spread it out no a baking sheet:


Keep stirring everything around so it doesn't burn & when they're browned you can take 'em out.
5.  To make the dressing, combine: 1/4 cup apple cider vinegar, 3/4 cup vegetable oil, 1/2 cup cane sugar (or substitute), and 1 tsp. salt  in a small saucepan.  Bring to a boil & boil for 1 minute. Now remove this from the heat & let cool.
6.  Add the noodle crunchies to the bowl of cabbage and veggies & cover w/ the dressing.  Toss to coat. Eat immediately - the noodles get soggy after awhile.....
