This is some gooey vegan chocolate brownie cake - moist and delicious!....covered in yellow vanilla frosting. Most people probably won't even realize it's allergy friendly;) - it's so good!
I adapted the recipes from "1,000 Vegan Recipes" to make them even friendlier and gluten-free.
Black Chocolate Brownie Cake
1. Preheat the oven to 350 degrees F.
2. Grease two round or square baking pans (If you want to make it layered, you can also use one large 9x13 pan).
3. In a large bowl, combine: 1 cup almond flour, 1 cup rice flour, 1 cup cane sugar (or substitute), 3/4 cup unsweetened cocoa powder, and 1/4 tsp. salt. Mix it up well.
4. In another bowl, combine: 3/4 cup of almond milk (or substitute), 1/4 cup of canola oil, 3/4 cup agave syrup (or honey - use 1/2 cup), & 2 Tsp. vanilla extract.
5. Pour these wet ingredients into the bowl of dry mixture and stir until blended. Now add 1 cup warm water to the mix & keep stirring.
6. Pour the batter into your prepared baking pan(s). Bake for 30-45 minutes, until a knife or toothpick inserted into the center comes out clean.
Yellow Vanilla Vegan 'Buttercream' Frosting
1.In a mixing bowl, start whipping up 1 cup of butter substitute. I used Earth Balance soy-free butter substitute......and it turned out delicious!! - also used my handy-dandy mixer - love it!
2. Gradually add in 4 cups confectioners' sugar, 2 Tbspn. almond milk, and 2 Tsp. vanilla extract + some yellow (or whatever you like!!) food coloring. Whip it up in the mixer for about 2 minutes until it's stiff and frostable:)
Once the cake has cooled, you can layer it and spread on you frosting.......yum!
I added (dairy-free, soy-free)chocolate chips to mine, but you could also try walnuts, or other nuts, or even sliced bananas layered in..........delish! ENjoy!
