Horchata - Its Vegan!


Happy March! It's National Nutritional Month in case you were wondering.....& today is NATIONAL PEANUT BUTTER LOVER"S DAY!! - So if you can eat 'em , Enjoy!!

On another note, this horchata was delicious.  I always love to get Horchata w/ Mexican food & I had no idea it was so easy to make!  This is so creamy and delicious - will definitely fulfill your cravings.  It's like a delicious rice milkshake.



Try some out - all you need is a blender!  It's also great to pair with something spicy or hot - helps cool your tongue down!

I adapted this recipe from 1000 Vegan recipes - It makes enough for 4...I doubled the recipe bc I wanted a big batch!
1.  Bring 2 cups of water to a boil.  In a blender grind up 1 cup of white rice (long-grain)  - This takes a minute and a little blending to get the rice to turn into a fine powder:


2.  Pour this powder into a large heatproof bowl.  Add 1/3 cup of sugar & stir it up.  Then pour the 2 cups of boiling water over it.   Set this aside and let it sit for 1 hour - go dance around or do some yoga!
3.  NOW this is going to be kind-of jelly like when you come back to it an hour later.  Pour it into the blender and process until it's smooth.
4.  Add in 2 tsp. of vanilla and 2 cups cold rice or almond milk (or sub.).  Blend it all up til it's smooth.
5. Use a fine mesh strainer to pour the liquid through as  you out it into your pitcher or container (to get rid of any ricey bumps).
6.  Serve over ice & sprinkle w/ cinnamon ~ ENjoy!
