This meal is so green, you might think it's St. Patrick's Day all over again!! Try out this really green dinner - we had some 'greenish' meatballs (fillled w/ fresh cilantro and parsley) along w/ quinoa spaghetti & pesto..........., and a veeeery green salad.
If you're a veggie just have the pasta and salad - they were delicious!
Meatballs w/ Quinoa Spaghetti
-This will make enough for 2-4, depending on your appetite!!
1. In a large pot bring water to a boil for your pasta.
2. Mix together 1 pound ground beef (or turkey) or seitan (try it out veggies!), 1 Tbsp. chopped parsley, 1 Tbsp. chopped cilantro, 2 Tbsp. corn (or rice) flour, and salt & pepper in a large bowl. Mix until well combined.
3. In a large skillet, heat up 1 Tbsp. olive oil. Round up meatballs and place them in the pan, flipping to brown on all sides. Now you could put in your pasta to start cooking it too (follow directions on the box).
4. Once meatballs are almost cooked, add in your pesto. I used store bought (w/o milk), you could make your own too:).
5. When the pasta is cooked, scoop it out with some tongs and add it into the pan.
Stir it up & Fill up!!
VERY Green Salad
Everything in this salad just happens to be green, so grub it up!!
1. In a large bowl, combine a few handfuls of mixed greens, 1 sliced avocado, handful of broccoli sprouts, 1 sliced cucumber and 2-4 sliced green onions.
Toss it up & add dressing of your choice ~ ENjoy!!
