Vegan Potato Leek Soup


....'Cause you need something to go with that crusty bread!

It's warm & delicious and one of the easiest soups EVER to make!! Try it out for a quick warm hearty fix.



Vegan Potato Leek Soup
1.  In a large soup pot, heat 3 Tbsp. vegan butter substitute on medium heat.  Add in 3 sliced leeks and stir to coat.  Salt and let cook for about 1o minutes until translucent.
2.  Add in 2 peeled and sliced potatoes.  Keep stirring and cook for another 10 minutes.
3.  Now add in 5 cups of vegetable broth and bring to a boil.
4.  Once boiling, lower heat to a simmer and cook covered for about 30 minutes.  (until the potatoes are cooked.
